Starters

Smoked pork, goose liver, apple and mushroom terrine, saffron and pear chutney, tarragon brioche

Crispy calf’s sweetbreads, haricot and porcini ragout, rose glaze

Ravioli of langoustine, buttered cabbage, albufera sauce

Confit shallot and sage tarte tatin, baby tomato salad, shallot and black pepper vinaigrette

Cream of watercress soup, poached egg white

Mains

Curry-roasted hake, porcini mushrooms, confit garlic, Sauternes cream

Lightly smoked trout, saffron poached potatoes, mustard and chervil velouté, poached egg

Confit of pork neck, ratatouille, beurre de tomate, olive tapenade

Beef rump steak Bordelaise, haricot vert, shallots

Magret duck, porcini and hazelnut ballotine, thyme-roasted apples, shallots, courgettes, Meursault cream

Wild mushroom and black truffle risotto, cep cream

Desserts

Red wine jelly, winter fruits, coulis

White chocolate and mint mousse, burnt orange crème anglaise
