Sparkling wine & a Summer’s dessert

Summer is a time of plenty of fruit and we would like to share this easy recipe for a light and fruity dessert – beautiful when served with our La Motte MCC.

Fruit Consommé Recipe

Serves 4-6

Ingredients

6 peaches, peeled and diced, plus 1 for garnishing (could be replaced with any other fresh, seasonal fruit)

2/3 cup (160 ml) fresh orange juice

1 stalk lemon grass, bruised and finely chopped

2/3 cup (160 ml) simple syrup (1 part of sugar dissolved in 2 parts water)

1/4 cup (60 ml) gooseberries, halved

1/4 cup (60 ml) each of:

strawberries, diced

blackberries, halved

blueberries, halved

fresh cherries, hlaved

1 tsp (5 ml) picked fresh thyme leaves

2 Tbsp (30 ml) chopped fresh mint

Method

Place the diced peaches, orange juice, lemon grass and syrup in a blender and purée.

Place a layer of cheesecloth in a wire sieve and pour the purée into the sieve. leave to drain (preferably overnight).

Use the strained liquid for the consommé.

The following day, place the fruit and berries in glasses or bowls, pour the consommé over and garnish with mint and diced peach.

Serve with well-chilled glass of La Motte MCC.
