Salad of pea, broad bean, rocket and burrata

Ingredients

10 g Wild rocket

10 g Peas

20 g Broad beans

1 Tbs Leeks thinly sliced

6 rounds of thinly sliced cucumbers

1/2 Burrata (Get it online from puglia.co.za)

Lemon thinly sliced

Fresh dill

Lemon Dill Vinaigrette

Ingredients

200 g Olive oil

50 g Lemon juice

Chopped fresh dill

Salt and black pepper to taste

Method 

Bring a medium saucepan with water to boil. Prepare a large bowl of ice water.

Blanch the peas for 1 minute. Blanch the broad beans in boiling water for 2 minutes. Refresh and drain on blue towel

Put the rocket, peas, broad beans, cucumbers & leeks in a mixing bowl. Dress with the vinaigrette and place in a bowl. Top with the burrata and garnish with dill and some olive oil, salt and pepper.

Enjoy with a refreshing glass of 2020 La Motte Sauvignon Blanc.
